Turmeric & Ginger Pina Colada

This creamy snow-day Pina Colada includes a kick of fresh ginger and turmeric. It’s vegan friendly, too! Be sure to use canned coconut cream to yield the proper creamy consistency.
Makes 1 drink
1/2 cup (125 mL) frozen pineapple chunks
1/2 cup (125 mL) cubed ice
1/2 cup (125 mL) pineapple juice
3 tbsp (45 mL) canned coconut cream
2 tbsp (30 mL) agave syrup
1 tsp (5 mL) freshly grated ginger
1 tsp (5 mL) freshly grated turmeric
Shredded coconut for rimming
Pineapple wedge to garnish
Rosemary sprig to garnish
1. To a blender, add pineapple chunks, ice, pineapple juice, coconut cream, agave syrup, ginger and turmeric. Purée until creamy and smooth. Rim serving glass with shredded coconut and transfer mixture to serving glass. Garnish with a wedge of pineapple and rosemary sprig.
