Tequila Sunset

A retro Tequila Sunrise cocktail has an orange juice base, so pale, coral-coloured orange sorbet would certainly work here, but passionfruit or mango sorbet will give a more modern flavour spin and glowy, golden colour. Panache brand (available at many grocery stores, panache.ca) makes a delicious sparkling pomegranate Italian soda, or to give the cocktail a more neon-bright hue, use grenadine and sparkling water.
Makes 1 drink
8 oz mango, passionfruit or orange sorbet
1 1/2 oz blanco tequila
1/2 oz lemon juice
2 oz pomegranate sparkling soda (substitute: 1/2 oz grenadine syrup and 2 oz plain sparkling water)
Orange slice and fresh or preserved cherry for garnish
1. Place sorbet in the bottom of a tumbler and drizzle with tequila and lemon juice.
2. Top with soda (substitute: mix grenadine syrup and soda water gently in a measuring cup and pour over tequila mixture) and garnish.
