Strawberry and Avocado Salad
Early Summer 2004
Don't be afraid to try this recipe. Although it may seem a bit unusual, you will be amazed at how well the strawberries and avocado match.
Serves 6
1¼ cups (300 mL) hulled strawberries
2 tbsp (25 mL) olive oil
1 tbsp (15 mL) vegetable oil
½ to 1 tsp (2 to 5 mL) good-quality Balsamic vinegar
Salt and freshly ground pepper
3 avocados
1. Purée the strawberries in a food processor. With the motor running, add the oils, then the vinegar. Season to taste. Cut the avocados in half, remove the pits, and then remove the skin. Slice each half thinly and arrange on a plate.
2. Pour over the dressing and serve immediately.
Makes 1/2 to 2/3 cup (125 to 150 mL) dressing
