Plant-Based Spicy Sour

Using fresh pressed juice allows you to skip the syrup in a sour cocktail while the addition of chickpea brine offers frothy results. Shake with jalapeño for a hint of fiery flavour.

Makes 1 cocktail

1 oz vodka
2 oz freshly squeezed mandarin juice such as clementine
1½ oz pineapple juice, preferably freshly pressed
¼ oz freshly squeezed lime juice
Mandarin segments or mandarin peel strip for garnish
Lime wheel for garnish (optional)
Fresh thyme for garnish

Pour vodka and mandarin, pineapple and lime juices into a cocktail shaker. Fill with ice. Shake until chilled. Serve in a coupe glass. Garnish with citrus peel and wheel, and thyme.

BRIGHT IDEAS For an extra-frothy cocktail, shake ½ oz aquafaba (chickpea brine) along with ingredients. For a spicy kick, shake the cocktail with a slice of jalapeño and try using one as a garnish, too.
