Pineapple Daiquiri

This riff on a classic Daiquiri calls for the refreshing tang of pineapple juice infused with the essence of cloves.
Makes 1 cocktail
1 1/2 oz rum
1/2 oz simple syrup
3/4 oz lime juice
3/4 oz pineapple juice
1 pinch of salt (five grains of rock salt)
1 pineapple wedge, for garnish
5 cloves
Chill a daiquiri glass. Combine all ingredients (except garnish) in a cocktail shaker filled with ice and shake for 45 seconds. Strain into chilled glass. Garnish with a clove-studded pineapple wedge.
