Kir Royale Floats
Early Summer 2023
End the meal on a playful, sweet note by turning a traditional French aperitif—cassis liqueur and bubbly— into a grown-up riff on a float.
Serves 2
1. Set out two large coupe or parfait glasses. Skewer a few strawberries and raspberries on cocktail picks. Add a scoop of berry sorbet or vanilla ice cream to each glass. Pour 1 1/2 oz bubbly along the side of each glass then pour 1 oz cassis into each. Garnish the glasses with fresh fruit skewers.
