Homemade Bread - Focaccia

The modern era of home bread-baking began around the same time as Food & Drink, with the arrival of fully automated countertop bread machines in the ’90s. Their end came in the mid-aughts with the help of Jim Lahey and his seismic no-knead bread technique. That eventually gave way to the bouleas-selfie phase of the pandemic, during which we were all babysitting foaming jars of sourdough starter. We haven’t fallen out of love with bread-making postpandemic though—we’ve just split the difference, allowing for all the talk of optimal hydration, prolonged fridge ferments and open crumb, but without the demanding little sidekick. Enter focaccia, an old bread friend seen anew, because we’re hooked on homemade bread now.

 

Serves 6 to 8

1 envelope (8 g) instant yeast
4 cups (1 L) bread flour
1 tbsp (15 mL) kosher salt
1 3/4 cups (425 mL) lukewarm water
6 tbsp (90 mL) extra virgin olive oil, divided, plus extra for greasing hands
Butter for greasing pan
1/2 cup (125 mL) ricotta
1 1/2 tsp (7 mL) Maldon salt
1 tbsp (15 mL) chopped rosemary leaves
8 oz (225 g) seedless red grapes (see TIP)

1. In a medium-size bowl, whisk together yeast, flour and salt. Pour water overtop and stir until a shaggy dough forms.

2. Add 4 tbsp (60 mL) olive oil to a large clean bowl and scrape dough into bowl. Turn to coat in oil, cover and refrigerate for 24 to 48 hours (the longer the rest, the more developed the flavour).

3. Grease bottom of a 9 x 13-inch (23 x 33-cm) pan with butter. Using well-oiled fingers, pull opposite sides of the dough toward the centre of the bowl and punch down to deflate dough. Rotate the bowl 1/4 of a turn and repeat process several more times to create a ball of dough.

4. Turn out dough and oil into prepared pan. Give the pan a shake or two to centre the dough, and let rise uncovered in a warm spot for 2 to 4 hours or until puffy. Test by giving it a poke: if the dough holds the indent it’s ready; if it springs back quickly, allow to rise longer.

5. Arrange a rack in centre of oven and preheat to 425°F (218°C).

6. Again with oiled fingers, dimple the dough by pressing straight down until you feel the bottom of the pan. While you’re doing this, stretch the dough into the corners of the pan if necessary. Using roughly a tablespoonful at a time, dollop ricotta over the surface. Drizzle surface with remaining 2 tbsp (30 mL) oil, sprinkle Maldon salt and rosemary overtop. Arrange grapes in the form of decorative clusters overtop. Garnish with an easy-to-remove stem to complete the look, if you like.

7. Bake on centre rack for 25 to 30 minutes or until golden and crisp. Let cool for at least 15 minutes before serving.

Serves 6 to 8

TIP Swap the grapes for an equal weight of halved cherry or cocktail tomatoes, or leave out the grapes altogether for a simplified (but still really, really good) bread. If you go this route, up the measure of water in the dough to 2 cups (500 mL).
