Cozy Chai & Maple Pear Cider

Switch up the traditional hot apple cider for this cozy pear cider infused with chai and maple. This mocktail features a homemade blend of chai spices and can be served warm or cold.
Makes 4 to 6 drinks
4 cups (1 L) non-alcoholic pear cider
2 whole cinnamon sticks
2 whole star anise
5 whole cardamom pods
5 whole cloves
5 whole black peppercorns
3 tbsp (45 mL) maple syrup
2 tsp (10 mL) vanilla extract
Orange peel to garnish
Cinnamon stick to garnish
Sweetened whipped cream to garnish
Ground cardamom to garnish
1. In a large saucepan, add cider, cinnamon sticks, star anise, cardamom pods, cloves, peppercorns, maple syrup and vanilla extract. Stir to combine. Bring to a gentle simmer over medium heat and let simmer 20 to 25 minutes.
2. Remove from heat and transfer to heatproof serving glasses. Garnish with orange peel, cinnamon stick, dollop of whipped cream and pinch of ground cardamom. To serve chilled, let cider cool to room temperature and serve over ice.
