Aperol Sour

Sweet, sour and gently bitter, this gorgeous cocktail has a light, pillowy texture thanks to an egg white. Between the vibrant hue and gorgeous cap of foam, it will be the star of your Instagram feed.

 

Makes 1 drink

1 oz Aperol (LCBO 176834)
1 oz gin
3/4 oz Simple Syrup (recipe follows)
3/4 oz fresh lemon juice
1/4 oz fresh orange juice
1 egg white
Lemon or orange twist to garnish (optional)

 

1. Place Aperol, gin, simple syrup, lemon juice, orange juice and egg white in a cocktail shaker. Shake vigorously until frothy, about 30 seconds. Fill shaker three quarters full with ice. Shake until ice-cold, about 15 seconds. Fine-strain into a chilled coupe. Garnish with citrus twist, if using.

 

Makes 1 drink

SIMPLE SYRUP

Bring 1 cup (250 mL) water to a boil and stir in 1 cup (250 mL) sugar until dissolved. Pour into jar and let cool. If storing, cover and refrigerate for up to 1 month.

Makes 1 1/2 cups (375 mL)
