Clementine Tonic

We’ve taken the Vodka Tonic, a beloved summer sipper, and transformed it into a vibrant winter highball with tangy clementine juice. There’s also a flexible twist: for a lower-alcohol version, use soju instead of vodka. The clear, rice-based spirit from Korea shares vodka’s neutrality, so the two are interchangeable here.

Recipe

This sipper is terrific paired with the Japanese flavours of Eggplant Kushiyaki.

1½ oz vodka or plain soju
1 oz strained fresh clementine juice
¼ oz strained fresh lime juice
3 oz tonic water, chilled
Clementine wheel, to garnish

1. Add vodka or soju and 2 ice cubes to a chilled highball glass. Stir for 15 seconds to chill. Fill with ice and add clementine and lime juices. Top with tonic and lightly stir. Garnish with clementine wheel.
