Paloma
The Margarita may be the face of Mexican cocktails here in Canada, but the Paloma is up there with the country’s most beloved drinks. Sweet, tart and easy-to-make, the refreshing highball features tequila, grapefruit-flavoured soda and a splash of lime with an optional salt rim. In Mexico, Jarritos soda is most commonly used, but you could pour any available brand including Fever-Tree Pink Grapefruit or San Pellegrino Pompelmo.

A quarter of a fresh lime
Kosher or sea salt
Ice
1½ oz tequila
Grapefruit flavoured pop
1. Rub the lime around the rim of a tall glass. Invert the glass into a saucer of salt to salt the rim. Put two or three ice cubes into the glass. Add tequila. Squeeze lime quarter into the glass and throw it in. Top up with grapefruit pop.
