Though there are rosés that will benefit from short-term cellaring, the vast majority of them are intended to be consumed within a year or so of release. Quality rosés like these are made from red wine grapes, in one of three ways. Direct pressing creates lightly coloured, delicately flavoured wine by extracting just a bit of colour from the skins before fermentation. Drawing off involves drawing juice from the skins after 6-48 hours of fermentation, which lets winemakers nuance the intensity of colour and flavour. Saignée (bleeding) is similar to drawing off: a portion of the juice is drawn from a fermenting red wine.
