2 cups oaked Chardonnay
½ cup pear juice
½ cup fresh (cloudy) apple juice
1 cinnamon stick
3 slices fresh ginger
3 cardamom pods (optional)
1 tbsp honey
Asian pear slice and star anise, for garnish
- Add all ingredients except garnish to a saucepan set over medium heat. Stir until warm but not boiling. Pour into heatproof mugs or glasses. Garnish each with an Asian pear slice and star anise.
Makes about 6 servings
TIPS FOR WARM DRINKS
· Bring your mixture just to the steaming point. Boiling reduces the alcohol and upsets the balance.
· Bundle whole spices, such as cloves, allspice and cardamom, in cheesecloth before simmering in liquid.
