2 tbsp (30 mL) olive oil
1 tbsp (15 mL) chopped fresh parsley
1 tbsp (15 mL) chopped fresh coriander
1 tsp (5 mL) ground cumin
2 cloves garlic, chopped
1 tsp (5 mL) lemon juice
8 lamb loin chops, 1 inch (2.5 cm) thick, trimmed
Salt and freshly ground black pepper to taste
- Combine olive oil, parsley, coriander, cumin, garlic and lemon juice in a bowl. Brush onto both sides of lamb chops and season with salt and pepper. Marinate for 30 minutes.
- Preheat oven to 500°F (260°C). Place lamb chops on a baking sheet. Bake in oven for 3 minutes. Turn oven off and leave lamb chops for 15 minutes for rare or 25 minutes for medium. Do not open oven.
- Remove lamb chops from oven and place on couscous.
