1½ oz Empress 1908 Gin
¾ oz freshly squeezed lemon juice
½ oz simple syrup (see recipe below)
2 to 3 oz sparkling wine
Lemon twist, for garnish

Pour gin, lemon juice and simple syrup into an ice-filled shaker. Shake until chilled. Fine-strain into a chilled flute. Top with sparkling wine. Garnish with lemon.

Makes 1 cocktail

Simple Syrup
Bring 1 cup (250 mL) water to a boil in a small saucepan. Add 1 cup (250 mL) granulated sugar. Stir until dissolved. Remove from heat. Let cool completely. Syrup will keep well, stored in a resealable container in the fridge, for at least 2 weeks.

Makes 1½ cups (375 mL)
