Place 1 jumbo marshmallow on a small baking sheet. Using a torch or an oven broiler, singe marshmallow until golden. Pour 1 ½ oz Canadian whisky and 3 to 4 oz prepared cold brew (preferably decaf) into a highball glass filled with ice. Stir to mix. Carefully skewer marshmallow and use to garnish cocktail.
Skewer 3 store-bought or homemade mini pancakes on a cocktail pick. Place 1 tsp sugar in bottom of a chilled rocks glass. Saturate sugar with 3 dashes Angostura bitters. Add a splash club soda or water. Muddle sugar with bitters until dissolved. Add 1 large ice king cube. Add 1 ½ to 2 oz Canadian whisky such as Crown Royal Whisky and stir well. Drizzle prepared pancake garnish with syrup, if you like. Use to garnish the cocktail.
