Tiki Ceviche Scallops
in Half Coconut Shell

Ingredients
  • 10 large sea scallops, chopped
  • Juice and zest of 1 lime
  • 1 jalapeno, finely chopped
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 1 cup cilantro, chopped
  • 3 plum tomatoes, chopped
  • 1 avocado, chopped
  • 2 tbsp olive oil
  • 1 clove garlic, chopped
  • 1 tsp hot sauce
  • ½ tsp Worcestershire Sauce
  • salt and pepper
  • 6 whole coconuts halved
Directions

1. Combine all ingredients in a bowl. Marinate for 20-30 minutes in refrigerator before serving.
