BLINIS AND POTATO PANCAKES WITH CAVIAR

Use the best beluga caviar, inexpensive salmon caviar or smoked salmon for a luxurious New Year's hors d'oeuvre. Serve this dish of caviar set in ice to keep it cold. Present the blinis and potato pancakes around it and set out the usual accompaniments, sour cream, chopped red onions and grated egg. Use a non-metal spoon for the caviar, as a metal spoon will tarnish.

Potato Pancakes:
3 Yukon Gold potatoes, peeled and shredded
1 egg, beaten
1/4 cup (5o mL) chopped chives
2 tbsp (25 mL) all-purpose flour
1/2 tsp (2 mL) baking powder
Salt and freshly ground pepper to taste
2 tbsp (25 mL) chopped parsley
Vegetable oil for frying

Garnish:
Sour cream and caviar

  1. Squeeze potatoes in a tea towel to remove the liquid. Place in a large bowl and stir in remaining ingredients.

  2. In large skillet heat enough oil to coat the base of the skillet. Drop about 1 tbsp (15 mL) mixture per pancake into oil and flatten. Fry until crisp on one side, about 1 minute, repeat on second side. Drain on paper towels.

  3. Top with sour cream and caviar.

Makes about 24 pancakes

Breakneck Blini

A traditional blini recipe uses yeast but this is a quicker version.

1 cup (250 mL) all-purpose flour
1/3 cup (75 mL) buckwheat flour
1 tsp (5 mL) baking powder
1/2 tsp (2 mL) baking soda
1 egg
Pinch salt
1 1/2 cups (375 L) milk
3 tbsp (45 mL) yoghurt
2 tbsp (25 mL) butter

  1. Combine flours, baking powder and soda. In a large bowl, stir together egg, salt, sugar, milk and yoghurt. Beat the liquids into the dry ingredients. Let stand 20 minutes.

  2. In a skillet on medium heat melt the butter. Place a half tablespoon at a time of batter in skillet keeping the blinis apart. Cook about 30 seconds or until mixture bubbles and bottom is crisp. Turn over and cook second side until golden, about 20 seconds. Repeat with remaining batter.
