Born and raised in Calabria, Italy, Chef Domenico Casagrande Bei (Mimmo)
achieved his chef accreditation in Italy. Working in various hotels and
restaurants in Northern Italy and Los Angeles prepared Chef Mimmo to teach
in culinary schools in Italy and Switzerland, giving him the experience that
has brought him to where he is today.
Chef Mimmo helps foster economic growth in the community by participating in
community organizations such as the Chef ’s Guild of Windsor and Essex
County, and by offering his time to teach and mentor young chefs. His
teaching talents have also been featured on television, In Good Taste with Chef Mimmo, and with the launch of his cookbook, Through the Seasons with Mimmo.

Q: What would people be surprised to find in your kitchen?
A: I always snack on granola – at home and at the restaurant – granola bars,
granola cereal.
Q: Which kitchen tool couldn’t you live without?
A: My large chef knife.
Q: What is your favourite guilty pleasure?
A: Nutella.
Q: What’s the most unusual thing you’ve ever eaten?
A: While in L.A., I ate kangaroo.
Q: What type of food has influenced you the most?
A: The Italian/Mediterranean food in my grandmother’s kitchen.
