Bouchra is currently the specialty chef for The Sultan’s Tent & Café
Moroc and for BerBer Lounge. Born in Morocco, Bouchra moved to
Toronto when she married in 1991. Her experience includes cooking classes,
consulting and catering. She has made numerous appearances on radio and TV.
Bouchra learned about her native cooking from her mother, a Cordon Bleu
chef and TV personality. Cooking from scratch and using the best of aromatic
spices, she creates a truly traditional selection of dishes.

Q: What would people be surprised to find in your kitchen?
A: A piece of homemade yeast. The surprising part is that the original piece it
came from was made several years ago. I explain how this came to be in some of
my cooking classes.
Q: Which kitchen tool couldn't you live without?
A: Couscoussier without a doubt and I often don’t leave home for any cooking
event without it.
Q: What is your favourite guilty pleasure?
A: Chocolate and more chocolate – but the good kind!
Q: What’s the most unusual thing you’ve ever eaten?
A: Snails – what else can I say?
Q: What type of food has influenced you the most?
A: Fruits/nuts in their various forms (fresh, dried, cooked etc.)
