Before settling in Canada, José Arocena trained in a variety of restaurants throughout Japan, absorbing the sights,
the culture and, most importantly, the cuisine! Since his return, he has been
delighting patrons with his take on traditional and modern sushi favourites
at Sushi 88, where he is known for his quality of rice, perfectly fresh fish and
creative, respectful use of excellent ingredients. Given his passion and
commitment, it’s no wonder Chef José Arocena has earned a muchdeserved
following of loyal sushi aficionados.
