Winter Cabin Sour

In a cocktail shaker filled with ice, add 1½ oz spiced Canadian whisky, 1 oz lemon juice, 1 oz clove syrup (recipe follows) and ½ oz egg whites (optional). Shake sharply and strain into a rocks glass with ice. Add 3 drops chocolate bitters and garnish with a clove-studded lemon slice.
CLOVE SYRUP
Add 1 cup sugar and 4 dried cloves to a heatproof container. Add 1 cup (250 mL) boiling water and stir to dissolve. Allow to cool, cover and refrigerate. Remove cloves after 2 to 3 days, to taste.
