Vanilla Pepper Scot

This unusual recipe has been quietly passed between family and friends, and no one is sure where it originated. What we do know is that this drinkable dessert, served after dinner or to end a perfect summer evening, has won over everyone who tastes it.

1 scoop vanilla ice cream
1 ½ oz scotch, blended
1 tsp black pepper, finely ground



1. To a coupette, add vanilla ice cream.

2. Slowly pour blended scotch into the glass. Add freshly ground black pepper.

3. Serve with a spoon.

The blackcurrant compote can be prepared in advance—blueberries or blackberries can be used if blackcurrants are unavailable. Using a scoop of blackcurrant sorbet with two scoops of vanilla ice cream adds an extra dimension to the recipe. Shop-bought meringues are perfectly acceptable (no one wants to be baking meringues on a hot summer afternoon). Stiffly whipped cream is the final indulgence.
