Tiki Tidings in a Bottle

Make entertaining easy-breezy by preparing this simple tiki cocktail in a bottle. The only tricky part is picking up the orgeat—an almond and orange-blossom syrup—that’s available at specialty grocery and cocktail supply stores or online shops. Having a bottle on hand means you can make this complexly flavoured punch in five minutes flat, so you’ll be set for entertaining season.
Makes 4 to 6 cocktails
1 bottle (750 mL) light-or medium-bodied red wine, such as Gamay, chilled
4 dashes Angostura Bitters
3 oz dark rum or a mix of dark and amber rum
3 oz pineapple juice
2 oz orgeat
2 to 3 oz club soda
4 to 6 pineapple slices
4 to 6 cocktail cherries
1. Pour 1 cup (250 mL) wine into another glass or resealable container such as a Mason jar. Set aside for another use. Using a funnel, add bitters, rum, pineapple juice and orgeat to remaining 2 cups (500 mL) wine in bottle. Cap or recork. Gently shake/swirl to incorporate. You can serve right away, or if making ahead, store in the fridge for up to 1 day.
2. Gently shake just before serving. Pour into ice-filled tiki or wine glasses. Add ½ oz club soda to each glass. Garnish with pineapple slices and skewered cherries.
