Ramos Gin Fizz

The Sazerac Bar is almost as famous for another cocktail the Ramos Gin Fizz, a frothy affair that tastes as innocent as a sweet lemon milkshake and would be a delightful thing to serve at a summer brunch. This drink was a great favourite with Louisiana's colourful former governor, Huey Long, who for years ran his campaigns form the 110-year old Fairmont hotel, conducting much of his business in the bar. It is said he even had a 90-mile highway built from the state capital at Baton Rouge to the door of the Roosevelt, as the Fairmont was then called. Not quite as sweet as the Sazerac Bar's version, this recipe for the famous old cocktail can also be lengthened with a tablespoon of cream and a final splash of soda.

1½ oz gin
1 tbsp lemon juice
1 tbsp lime juice
1 tsp sugar
2 dashes orange flower water
1 egg white

1. Combine all ingredients in a shaker half-filled with ice and shake very vigorously.

2. Strain into an old-fashioned glass.
