Pink Greyhound Cocktail

This switched-up Greyhound replaces vodka with gin. The floral notes of gin marry beautifully with grapefruit juice and pomegranate juice adds a wonderful pink hue and a hint of sweetness. It’s a very refreshing cocktail and a perfect foil to the pink cheese canapé.

1 pink grapefruit
2 tsp concentrated pomegranate juice (POM)
1½ oz gin
4 mint leaves

1 Juice grapefruit and strain into a cocktail shaker. Add pomegranate juice, gin and mint leaves. Add ice and shake. Strain into a tall glass filled with ice. Garnish with a grapefruit twist or slice.

Makes 1 drink
