Irish Ginger

Makes 1 cocktail
2 orange wedges
2 lime wedges
¼ oz brown sugar syrup (see recipe below)
1½ oz Irish whiskey
3 to 4 oz ginger beer
Mint sprig, for garnish
To a highball glass, add orange and lime wedges. Pour in brown sugar syrup. Muddle. Fill glass with ice, and add whiskey. Top with ginger beer. Stir. Taste and add more brown sugar syrup, if needed. Garnish with mint sprig.
Makes 1 cocktail
Brown Sugar Syrup
1 cup (250 mL) brown sugar
1 cup (250 mL) boiling water
Combine brown sugar with boiling water in a heatproof resealable container. Stir to dissolve. Let cool. Cover and refrigerate for up to 2 weeks.
