Iced Plum Pudding

Susie Mendonça, Manager of Toronto's Sopra lounge, says you can substitute milk for cream in her ambrosial festive Martini, but adds, “Who watches calories during the holidays? Deal with it and go to the gym in January!”
Serves 1
Granulated sugar
Cinnamon
Ice
1 short shot espresso coffee
2 tbsp unsweetened whipped cream
½ oz Captain Morgan Original Spiced Gold rum
½ oz Amarula Cream liqueur
½ oz Navan vanilla Cognac
½ oz apricot brandy
1 cinnamon stick
1. Stir together sugar and cinnamon in a ratio of 3 parts sugar to 1 part cinnamon and use to frost the rim of a Martini glass.
2. In a cocktail shaker filled with ice, combine espresso, cream, rum, Amarula, Navan and apricot brandy. Shake vigorously, then pour gently into rimmed glass. Garnish with cinnamon stick and serve at once.
