Skip the big platter (and even the plates too) in favour of these individual servings of antipasto! If you can’t take the heat of fiery peppers, use mini bocconcini balls in their place.

12 skewers
12 marinated artichoke quarters
or 3 marinated artichokes, quartered
12 Kalamata olives, pitted
12 sliced mild salami rounds or 6 pieces of sliced mild soppressata, cut in half
6 marinated feta-stuffed hot red peppers, about 3 oz (90 g), cut in half, crosswise

1 Skewer 1 of each ingredient onto each skewer. When skewering stuffed hot peppers, be sure to skewer through pepper and not just the feta.

Makes 12 appetizer servings
