The first sake brewery in Toronto, and indeed Eastern North America, all of their products are of Junmai quality. 'Nama Cho' indicates that the sake has been once pasteurized. The water used in the brewing process is sourced from Northern Ontario and was selected for its similarity to the famous wells of Fushimi, Japan. Aromas and flavours of tea, mushroom, hazelnut, tempeh, pear, and wildflowers. It will pair very nicely with fish and seafood, or try it with a pork and noodle casserole.
