Ingredients
36 wooden skewers
36 thin slices prosciutto
36 fresh scallops
36 cherry tomatoes
DRESSING
½ cup (125 mL) olive oil
¼ cup (60 mL) freshly squeezed lime juice
¼ cup (60 mL) chopped fresh marjoram
Freshly ground black pepper
Directions
- Thread each skewer with a slice of prosciutto, a scallop and a cherry tomato. Whisk dressing ingredients together. Pour over skewers and refrigerate for an hour.
- Preheat oven to 425°F (220°). Place skewers in single layers on baking sheets. Bake for 8 minutes, turning halfway through.
