Edamame Humus

Edamame Hummus

Use Belgian endive spears or other vegetables to dip into it.


1 cup (250 mL) shelled edamame
1⁄4 cup (60 mL) low-fat mayonnaise
1⁄4 cup (60 mL) low-fat yogurt
2 tsp (10 mL) lemon juice
1⁄2 tsp (2 mL) ground cumin
1⁄2 tsp (2 mL) chili powder
1 tbsp (15 mL) coarsely chopped coriander
Salt and freshly ground pepper


  1. Place edamame, mayonnaise, yogurt, lemon juice, cumin, chili powder and coriander in a food processor. Season with salt and pepper. Process until smooth. Pile into a dish and serve with Belgian endive spears for dipping.
